Who does not love taco night?!?!? Honestly my thrown together version is more like a cross between a taco and fajita...
maybe a TA(co) + (fa)JITA = Tajita??

Here is the Adventures in House Sitting's Tajita Bar...

Mexican/TexMex for me REQUIRES some good homemade guacamole.

Ms. Homemaker's Guacamole
Avocado, Garlic, Red Onion, Jalapeno, Cilantro, Lime Juice, Garlic Powder, Cumin, Salt and Pepper
*
The kiddo liked it so much, he commented that he wished he had thought to ask me to help him with his Spanish project earlier in the year. I guess the teacher had a guacamole competition and each student whipped up their version, bringing it in to share with everyone. I could have kicked some high school students' butts with this batch haha!!

Okay, maybe another mix here. Salsa meets pico de gallo...hmm, tough one.
PICO DE (gallo) + SALSA = Pico de Salsa?? Not as great as Tajita and I am sure it makes absolutely no sense in translation...anyone know Spanish? Could use a little help on this one.

Pico de Salsa
Grape Tomatoes, Red Onion, Garlic, Jalapeno, Cilantro, Lime Juice, Cumin, Salt and Pepper
*
Chicken breast cooked up in my go-to TexMex blend of seasoning:
Salt, Pepper, Garlic Powder, Chili Powder, Cumin, Cayenne, Ground Coriander and Lime Juice
*
And you've gotta have beans...kind of like how I think you've gotta have guacamole.
